Get your Windows Phone 7.8 update this second
Download Nokia Care Suite and Navifirm, and you can download the finalised Windows Phone 7.8 files, pop them into Nokia Care Suite's packages folder and use it to flash the firmware to the phone, within 20 minutes, you'll be running 7.8.
I've flashed a Lumia 710 on O2 with the EE firmware, and my Lumia 800 now, and the process is flawless, with Zune reporting that no update was available for both. If anyone wants a step by step guide I'll do one.
