Good camera for girlfriend?

I'm not much of an expert on photography or cameras in general except the basics, but my girlfriend is in love with it, and I can tell her little point & shoot is holding her back.

So I come to you guys with a question. What would be the best camera to get for an amateur photographer for $300 - $600?
