Considering iPod touch but having some issues.

I'm considering an iPod touch but I'm wondering about a few things.
Before this I had a sony media player like the iPod touch, I could just drop any movies onto the device in windows 7 and it recognised them and converted to it's screen size.
To get to know what it would like on an iPod touch, I downloaded iTunes (remember I do no have the iPod touch yet), and I tried the same thing.
But iTunes does not recognise my MKV movies at all, and lots of my movies are MKV. Is there any way for iTunes to recognise them or having an official codec for support? Or is the only solution going to be converting all my movies if I ever want to play them on an iPod?
Another thing is that iTunes does not play my movies very well, it lags like crazy on windows 7 (the sound is fine and skips ahead of the video), my system can play the movie find on media player classic though, is this also the case on an iMac or is this a windows thing only?
I am still considering an iPoud touch, it's very nicely priced for a wifi device that can go online, but I'm just wondering how to solve my problems or if it would be easier just buy a sony device instead or something.
