In NYC, a dispute between MSG Networks and Time Warner Cable did actually result in MSG getting cancelled. It took “Linsanity” for a deal to be struck.

It probably didn’t help that MSG has a cozy deal with Cablevision (and used to be outright owned by Cablevision).

There are far too many well-funded, well-connected, and powerful parties with vested interests for model to go away quickly or cleanly.

Cord cutting will get worse before it gets better. People have wanted a la carte cable for a while, but expect that its going to suck quite a lot and be more expensive than bundled cable. It’ll likely be priced higher so there isn’t a level playing field (much like how digitally distributed games are often more expensive than physical retail copies).
