There’s no exchange rate to figure out. One Amazon Coin is effectively one cent, but there’s no way to convert from Amazon Coins back to USD (or any other currency) anyway, so it doesn’t matter. This is exactly the same as any other form of vendor / store specific currency, and nothing remotely like Bitcoin.
I assume he’s referring to the defense Lyft et al. have built into their business model. People don’t technically pay for the ride, they’re just encouraged to leave a donation once they reach their destination.
