Just a follow up- If you are tied to gaming and Photoshop then you might want to consider staying with Windows. We do have a newly improved Gimp 2.8, inkscape and Wine but they aren’t what you are used to so you likely will not care for them too much. and not all games work under wine so that’s something else to be mindful of.

while I don’t think there is anything specifically like what you have in mind the real power of Linux is the ability for you to make it into whatever you want.

It seems that it is in fact possible- you just have to have an idea of what you want it to look like in the end and be willing to put in a little work to set it up. For the touch screen it seems that it’s really just editing config files which is very easy.
I’m not sure if this helps you at all but the tools are all there for you if you want to go ahead with this creation. I’d be interested to see the final product. I don’t fully understand the idea of having a half functional touch-screen for a third monitor unless it’s also a touch keyboard on-call. I’m pretty sure that you could set it up though so the third screen is just the app launcher if you really want but that might get a little hairy for config files. I’d imagine that you’d have to “set up” your 3 monitors as one giant screen but then set programs to open at certain resolutions anchored to specific regions (your real screens 1 and 2).
If you are going to give this a shot I suggest going with Debian instead of Ubuntu (if you insist on using Ubuntu use Crunchbang or Elementary OS instead) and do a bit of research on desktop environments. Off hand I do know that e-17 and openbox are incredibly customizable if you don’t mind putting in the effort.
Good luck if you decide to take this challenge on and keep us posted with your successes and tribulations, both of which I’m sure there will be plenty.

Because the majority of people have two monitors, one of which is run through HDMI and the other is verticle?
I’m not going to go ahead and say that the dual monitor setup is perfect in Linux- because it’s not, but I’m afraid that your situation is rather unique and is not in fact an “example of why Linux will never succeed in overtaking Windows.”
If you are so inclined there are solutions to your issue but to declare that Linux will never succeed because of something that you and 1% of the population will ever have to deal with is just silly. I’m pretty sure that the general lack of knowledge that there even is a Linux is much more likely to prevent Linux from supplanting Windows; realistically there are so many reasons to list that I just don’t have the time or energy to go through them all.
I’m gonna give you a -1 for the sensationalistic headline but really just complaining about an semi obscure monitor setup.
