Moving from Android to iOS - Why do you guys need so much storage?

Now that the iPhone 6 and iOS 8 have resolved some of the main issues that kept me away - screen size, and 3rd party keyboards, and their notification scheme being the biggest - I feel like it's time to give the iPhone a try. I love Android, and I expect to go back in a year or true, but I want to see what life is really like using an iOS device full time.

My big question is, how much storage should I get. I'm currently on a Nexus 4 with 16 GB of ram. I'm using about 12 after 2 years. I've never felt constricted by the storage. Looking at the iPhone 6 I see that there is a 16 GB version, and I'm tempted to just go for that since most of what I do happens in the cloud anyway - especially my music which is all streamed in Google Play All Access.

Is there something I'm missing though? Why on earth would you need 64 or 128? Am I going to be handicapped?

Thanks for helping an iOS newbie.
