Leather is just a byproduct of the meat farming industry. Growing up on a small ranch I can tell you the leather is actually only a few percent of the value of the animal; no one is raising cattle for the leather.
Its been used for thousands of years and is still unrivaled by any synthetic material for gracefully aging while delivering very versatile performance.
It would be irresponsible and environmentally damaging to not sell the hides from processed animals
